Spinach
Tortellini Soup
1/2 Cup
Minced Onion
1 Clove Garlic, minced
6 Cups Fat Free Chicken Broth
1 (14 oz.) Can Crushed Peeled Tomatoes, undrained
1 (9 oz.) Package DiGiorno Fresh Tortellini (I used Three Cheese)
1 (10 oz.) Package Frozen Chopped Spinach, defrosted and drained
2 Tablespoons Kraft Reduced Fat Parmesan Style Grated Topping
1/4 - 1/2 teaspoon Pepper
In a large pot, sauté the onion and garlic in 1/4 cup of broth until
the onion is translucent. Add remaining broth and tomatoes. Bring
mixture to a boil. Add the tortellini and cook for 5 to 6 minutes.
When the tortellini is almost done, add the spinach and turn the
heat off. Mix in the parmesan and pepper. Serve.
Note: I only suggest making this if you really love spinach. You
could always use less or leave it out if you don't like it. The
points won't be affected any.
