Lone Star Black Bean Soup

4 (15 oz.) Cans Bush's Black Beans, undrained
1/2 Cup Diced Red Onion
2 Tablespoons Chopped Pickled Jalapeno Slices
2 teaspoons Sugar
2 teaspoons Apple Cider Vinegar
4 Cloves Garlic, minced
1/2 teaspoon Salt
1/2 teaspoon Cayenne Pepper
1 teaspoon Chili Powder
6 Tablespoons Fat Free Sour Cream

Pour the beans along with the liquid into a large saucepan. Add the remaining ingredients and mix. Bring the soup to a boil, and then reduce the heat to low. Simmer, covered for about 1 hour stirring occasionally. If the soup is too thick, you can add some water to thin it to your liking. Serve each bowl of soup with 1 tablespoon of sour cream and an additional jalapeno slice (or more) placed in the center of the soup.

Serves: 6 (1 or More Cups depending on how much water you use)
