Cream of
Broccoli Soup
1 Medium Onion,
chopped fine
1 Clove Garlic, chopped fine
2 Pounds Frozen Broccoli Florets
4 Cups Fat Free Chicken Broth
1 Cup Fat Free Evaporated Milk
2 Slices 2% Pepperjack Cheese
Salt and Pepper to taste
Steam Broccoli in a microwave until thawed. Drain and set aside.
Simmer onion and garlic in 1/4 cup broth until onion is soft. Add
the rest of the ingredients and bring to a boil. Lower heat and
simmer until broccoli is tender. Remove from heat and puree in the
blend in small batches (or use a stick blender directly in the pot).
Add milk, salt and pepper; heat until cheese is melted.
Serves: 8 (1 Cup Each)
