Stormy Weather Bean Soup

2 Cups Water
1 Cup (6 oz.) Finely Diced 97% Fat Free Ham
3/4 Cup Chopped Onion
1 Cup Shredded Carrots
1/2 Cup Red Pepper, chopped small
1/2 Cup Finely Chopped Celery
1 (16 oz.) Can Great Northern Beans, rinsed and drained
1 (16 oz.) Can Pinto Beans, rinsed and drained
1 (14.5 oz.) Can Stewed Tomatoes, undrained
2 Cups Tomato Juice
1/2 teaspoon Dried Minced Garlic
1 teaspoon Chili Seasoning
1 teaspoon Dried Parsley Flakes
1 Tablespoon Lemon Juice

In a large saucepan, combine water, ham, onion, carrots, and celery. 
Bring mixture to a boil. Lower heat and simmer for 15-20 minutes or until vegetables are tender, stirring occasionally. Add great northern beans, pinto beans, undrained tomatoes, and tomato juice. Mix well to combine. Stir in garlic, chili seasoning, parsley flakes, and lemon juice. Cover and continue simmering for 15 - 20 minutes, stirring occasionally. 

Serves: 6 (1 Cup Each)
