Recipes - Side Dishes

 

 

 

 

Fried Corn

4 cups corn kernels (4-6 ears depending on size)
1/3 cup fat free margarine spread
1/2 cup skim milk
Salt and Pepper to taste

Spray a medium skillet with non-stick cooking spray. Add margarine, milk and corn. Stir to combine. Cover and cook over low to medium heat for about 20 minutes, stirring often. Take the lid off of the skillet and continue cooking until the mixture thickens. Add salt and pepper to taste. If it gets too thick before the corn is completely cooked, add a tiny bit of milk. You could add a tiny bit of Splenda if you like your corn a little sweeter.

Serves:4 (3/4 Cup Each)
