Cheesy Potato and Onion Bake

1 1/2 Lbs. Potatoes
1 Small Onion
Pepper to taste
Garlic Salt to taste
Parsley to taste
8 Slices 2% American Cheese 
1/2 Cup Fat Free Half and Half


Preheat oven to 350 degrees. Scrub the potatoes with a vegetable brush and slice thin (leave on the peeling). Next slice the onion thin. Spray an 8X8 inch baking dish with non-stick cooking spray. Layer the potatoes and onions in the pan and sprinkle each layer with pepper, garlic salt and parsley. Cover and microwave for 5 minutes. In a small pan, heat the fat free half and half and add the cheese. Stir until the cheese is melted. Pour the cheese sauce over the potatoes and bake uncovered for approx. 30 minutes, or until the potatoes are tender. If it's getting too brown towards the end of the baking time, place a piece of foil lightly over the top.
