Berry Creamy
Fruit
8 oz.
Soft Light Tofu (weigh before you blot out the liquid)
8 Packets Splenda or more/less to taste
3 Cups Berries of your choice (strawberries, mixed berries,
blueberries, raspberries, blackberries, etc.)
Drain the tofu by placing on several layers of paper towels and then
top it with more paper towels. Weigh it down with something heavy
(but not heavy enough to smash it). Wait for 20 minutes. Place the
drained tofu, Splenda and 1 cup of berries (I used mixed berries) in
a blender. Process until smooth. Divide the remaining berries among
4 small dessert dishes (1/2 cup each). Drizzle the tofu mixture over
the fruit and serve immediately.
Serves: 4
