Mock Mashed
Potatoes
1 lb.
Frozen Cauliflower
2 Tablespoons Fat Free Cream Cheese
2 Tablespoons Fat Free Mayo
3 Tablespoons Fat Free Margarine Spread
Up to 4 Tablespoons Skim Milk
1/2 teaspoon onion, minced
Salt and Pepper to taste
Steam or microwave the cauliflower until very soft. Get out any
excess water by placing it on 2 paper towels, then cover with 2 more
paper towels and pressing. Put cauliflower in a food processor with
the cream cheese, mayo, margarine, and onions. Process until smooth
adding 1 tablespoon of milk at a time until you reach the desired
consistency of mashed potatoes. Add salt and Pepper.
