Fried Potatoes with Corn

1 Cup Chopped Onions
1 Clove Garlic, minced
1/4 Cup Chicken Broth
2 lbs. Potatoes, unpeeled and sliced thin
1 Can (15 oz.) Whole Kernel Corn, drained
Salt and Pepper to taste

Place first 4 ingredients in a large skillet spray with non-stick cooking spray. Cover and cook on medium heat for approx. 35-40 minutes (or until potatoes are soft). Stir every 3-4 minutes to prevent burning. If the potatoes start to stick, just add a tiny bit of water to the skillet. When potatoes are soft; add corn, salt and pepper. Heat until corn is hot. You can add other seasonings to this dish if you like. I sometimes like to sprinkle a few chives in for extra flavor. 

Serves: 11 (1/2 Cup Each)
