Black
Bean and Corn Salsa
6 Roma Tomatoes, seeded
and chopped
1 Large Sweet Onion, finely chopped
2-3 Cloves Garlic, finely minced
1 (15 oz.) Can Black Beans, rinsed and drained
1 (15 oz.) Can Garbanzo Beans, rinsed and drained
1 (15 oz.) Can Yellow Corn, rinsed and drained
1/4-1/2 Cup Fresh Cilantro
2 Tablespoons Lime Juice
1 teaspoon Olive Oil
3 Tablespoons Balsamic Vinegar
1 teaspoon Sugar
Salt and Pepper to taste
1 1/2 teaspoons Red Pepper Flakes
In a large plastic container with a tight fitting lid, combine the
tomatoes, onion, garlic, black beans, garbanzo beans, corn,
cilantro, lime juice, olive oil, balsamic vinegar and sugar. Season
with salt, pepper and pepper flakes to taste. Cover and shake to
combine.
Serves: 16 (1/2 Cup Each)
