Tablespoons Minute Tapioca
1 Cup Water
1/4 Cup Low Fat Ricotta Cheese
Put the tapioca and water into a small sauce pan and let it sit for
5 minutes. Bring to a boil and then turn the heat down to a simmer
for 2-3 minutes. Gradually add the ricotta cheese to the tapioca
mixture. Pour the mixture into a blender and puree until creamy
(about 1 minute). Cover and refrigerate until room temperature, or
keep chilled until ready to use. Use in place of recipes calling for
heavy cream.
Makes: Approx. 9 oz.
