Chewy Caramels

2 Cups Sugar
2 Cups Fat Free Evaporated Milk (divided)
1 1/3 Cup Light Corn Syrup
1 Cup Light Butter

Mix sugar, 1 cup of evaporated milk, corn syrup and butter together in a large 6-8 quart pan.
Bring mixture to a boil over medium heat and boil for 30 minutes stirring often. Add the last cup of milk and stir constantly. Cook until it forms a very firm ball in cold water. Place heavy duty foil into a 7X11 inch pan (make sure to get it into all of the corners) and spray generously with butter flavored non-stick cooking spray. Pour the caramel mixture into the pan and let cool until the caramel is leathery feeling. Turn the caramel out upside down onto a board and carefully peel the foil off. Let sit on a board until completely cool. Cut into 60 pieces. Wrap each piece in wax paper and store in a cool place.

Note: This is a more difficult recipe to make especially if you've never made caramels before. Lots of stirring is involved. I will say though, homemade caramels are well worth all of the effort. They're so much better than anything you could ever buy.
