Fluffy Cherry
Frosting
3/4 Cup
Sugar
2 Egg Whites
1/8 Cup Water
1/8 Cup Maraschino Cherry Syrup
1/4 teaspoon Cream of Tartar
1/2 teaspoon Vanilla Extract
1/4 teaspoon Cherry Extract
In a small heavy saucepan, combine the sugar, egg whites, water,
cherry syrup and cream of tartar. With a portable mixer beat the
mixture on low speed for 1 minute. Continue beating on low over low
heat until frosting reaches 160 degrees on a candy thermometer,
about 10 minutes. Pour into a large mixing bowl (a stand mixer is
best) and add extracts. Beat on high until frosting forms stiff
peaks. Store in the refrigerator until ready to use.
