Turkey and Pierogies Casserole

1 (16.9 oz.) Box Mrs. T’s Frozen Potato & Cheddar Pierogies (12 pierogies)
1 (10 ¾ oz.) Can Campbell’s 98% Fat Free Broccoli Cheese Soup
2 Cups Frozen Chopped Broccoli, thawed and drained
1/2 Cup Chopped Onions
1/2 Cup Chopped Green Peppers
1 (12.5 oz.) Can 98% Fat Free Premium Chunk White Turkey

Preheat oven to 350 degrees. Spray an 8x8 inch casserole dish with non-stick cooking spray. Boil 2 quarts of water. Add the frozen Pierogies and heat for 5-7 minutes (until they float); drain. Place into the prepared casserole dish (I found 3 rows of 4 to fit the best). In a small sauce pan, sauté the onions and peppers in a little bit of non-stick cooking spray until tender. Add the soup, broccoli and turkey (shred the turkey with your hands) and cook for about 5-6 minutes or until heated through. Spread the soup mixture evenly over the Pierogies and bake uncovered for 20-25 minutes.

Per Serving: 336 Calories; 5g Fat (13.8% calories from fat); 26g Protein; 48g Carbohydrate; 5g Dietary Fiber; 32mg Cholesterol; 1414mg Sodium.  Exchanges: 1 1/2 Vegetable.
