2/3 Cup Simply
Potatoes Southwest Style Hash Browns
1/2 Cup Southwestern Style Egg Beaters
2 LaTortilla Factory Whole Wheat Low Carb Tortillas
Salt and Pepper to taste
Spray a small skillet with non-stick cooking spray and heat over
medium heat. Once the skillet is hot, add the hash browns and cook
until they're hot. Pour the egg beaters over the hash browns and let
cook for 10-15 seconds. Stir and then add salt and pepper. Continue
cooking and stirring until the eggs are done to your liking. Heat
the tortillas in the microwave for about 10 seconds to warm. Split
the hash brown mixture between the two tortillas and roll up to make
2 burritos.
Note: 2 of these are filling. You could cut the recipe in half and
make 1 burrito if you want. If you can't find the LaTortilla Factory
Tortillas, you'll need to adjust the points. To do so, simply add
the calories, fat and fiber for 2 of the tortillas you're using to
the hash browns and egg beaters which is 130 calories, 0 fat and 2
fiber. From there, you'll be able to figure up the points.
