Sausage &
Cabbage Casserole
3 Cups Classic Cole
Slaw Mix (Cabbage and Carrots)
3/4 Cup Onion, chopped
6 oz. Morningstar Farms Sausage Style Veggie Crumbles
2/3 Cup Uncooked Long Grain Rice
Salt and Pepper to taste
2 (14.5 oz.) Cans Diced Tomatoes, undrained
2 Tablespoons Prepared Mustard
3 Packets Splenda
Preheat oven to 350 degrees. Spray an 8X8 inch pan with non-stick
cooking spray. Layer the coleslaw mix, onion, veggie crumbles, salt,
pepper and uncooked rice. In a mixing bowl, combine the undrained
tomatoes, mustard and Splenda. Pour this mixture over the layered
mixture. Cover tightly with foil and bake for 1 1/2 hours.
