Santa Fe Pie

1 1/2 Cups Frozen Corn, thawed
8 Medium Scallions, sliced
1 (15 oz.) Can Pinto Beans, rinsed and drained
2 Slices Kraft 2% Cheddar Cheese
1/2 Cup Reduced Fat Bisquick
1/2 Cup Fat Free Milk
1/2 Cup Chunky Salsa
1/2 Cup Egg Substitute
Salsa for garnish

Preheat oven to 400 degrees. Spray a 9" deep pie plate with cooking spray. Layer corn, scallions and beans into the pie plate. Tear the cheese slice into small pieces and place evenly on top of the beans. In a small bowl, stir together the baking mix, milk, salsa and egg substitute until blended. Pour evenly over cheese. Bake 35-40 minutes or until a knife inserted into the center comes out clean. Cool 2-3 minutes. Slice into 4 wedges and serve with extra salsa on top.
