Chicken and
Salsa Noodle Bake
12 ounces 99% Fat Free
Canned Chicken breast, in water
8 ounces whole wheat noodles
3 oz. Velveeta Light
1/2 cup salsa
1 (10 1/2 oz.) Can 98% fat free cream of chicken soup
3/4 c. chopped onions
8 oz. Canned Black Beans, rinsed and drained
Pepper to taste
Preheat the oven to 450 degrees. Cook the whole wheat noodles
according to package directions, drain and set aside. In a small
sauce pan sprayed with non-stick cooking spray, sauté the onions
until tender. Stir in the Velveeta, soup, salsa, and chicken, and
heat until the cheese is melted. Mix in the cooked noodles and black
beans. Add black pepper to taste. Pour into a 2 quart casserole dish
that has been sprayed with non-stick cooking spray. Bake uncovered
until heated through (about 10 minutes). Cut into 6 pieces and
serve.
