Cheese and
Refried Bean Casserole
16 oz. Fat Free
Cottage Cheese
3/4 Cup Canned Corn, drained
3/4 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Chili Powder
1 (4 oz.) Can Diced Green Chilies, drained
2 Cups Medium Salsa
8 Corn Tortillas
1 (16 oz.) Can Fat Free Refried Beans
1/4 Cup Fat Free Shredded Cheddar Cheese
Preheat oven to 350 degrees.
In a medium bowl, mix cottage cheese, corn, garlic powder, onion
powder, chili powder, and diced chilies; set aside.
On the bottom of a 9-inch square non-stick baking pan sprayed with
non-stick cooking spray; spread 1 cup salsa. Place 4 tortillas
evenly over the salsa. Place the beans evenly over the tortillas.
Place 4 tortillas evenly over the beans. Spread the cottage cheese
mixture evenly over the tortillas. Over the cheese mixture, spread
the last cup of salsa. Sprinkle the fat free cheddar cheese evenly
over the top.
Cover the pan with foil and bake for 40 minutes. Remove cover and
let rest 5 minutes before slicing.
