4 (6 oz.) Catfish
Fillets
Cajun Seasoning
Black Iron Skillet
Heat the iron skillet on high on the stove for 8 minutes. Do not put
any oil or non-stick spray in the skillet. After 8 minutes, quickly
spray the skillet with non-stick spray and put the fish in. Season
the fish with the Cajun seasoning. After 4 minutes, flip the fish to
the other side and sprinkle with Cajun seasoning. If the fish is
thick in the middle, put a lid on the skillet for a few minutes, but
usually the fish is cooked in 8 minutes. It should lift right out of
the skillet.
