BBQ Beef Cups

1 Cup Diced Onion
1 Lb. Extra Lean Ground Beef
4 Garlic Cloves, minced
1/2 Cup BBQ Sauce
1 (15 oz.) Can Diced Potatoes, drained
1/2 teaspoon Black Pepper
1/2 teaspoon Chili Powder
1/8 teaspoon Cayenne Pepper
16 Pillsbury Country Biscuits (1 point each)
1 Cup Fat Free Shredded Cheddar Cheese

Preheat oven to 400 degrees. Spray a large skillet with non-stick cooking spray. Cook onion beef and garlic until the veggies are tender and the beef is no longer pink. Drain. Place the meat mixture back into the skillet and add the BBQ sauce, potatoes, black pepper, chili powder and cayenne pepper. Cook until hot. Stir in the cheese and remove from heat. Spray a regular size muffin tin with non-stick cooking spray. Flatten each biscuit with the palm of your hand and place each biscuit into a well of the muffin tin. Place 1/4 cup of the meat mixture into each biscuit. Bake for approx. 15 minutes or until the biscuits are golden brown.
