Taco Bake
8 oz.
Lean Ground Turkey
1 Cup Chunky Salsa
2/3 Cup Frozen Whole Kernel Corn
1 teaspoon Dried Parsley Flakes
1 (10 oz.) Can Tomato Soup
1/3 Cup Carnation Nonfat Dry Milk Powder
1/2 Cup Water
4 (98% Fat Free) Fajita Size Flour Tortillas, cut into 1/2" strips
3/4 Cup Fat Free Shredded Cheddar Cheese
1 oz. Wow Doritos Chips, crushed
Preheat oven to 375 degrees. Spray an 8X8 Baking dish with butter
flavored cooking spray. In a large skillet sprayed with cooking
spray, brown meat. Stir in salsa, parsley flakes and corn. In a
small bowl, combine tomato soup, dry milk powder and water. Add soup
mixture to meat mixture. Mix well to combine. Stir in tortilla
strips and 3/4 Cup Cheddar Cheese. Pour into prepared baking dish.
Bake for 30 minutes. Evenly sprinkle the crushed chips over the top
and continue to bake for 2-3 minutes. Place dish on a wire rack and
let set for 5 minutes.
