Salmon
Cakes
1 (15
oz.) Can Salmon, drained and flaked with skin removed
1 Cup Black Beans, rinsed and drained
3 Scallions, chopped
1/2 Small Red Pepper, diced
1/2 Cup Egg Substitute
1 teaspoon Mustard Powder
1/2 teaspoon Paprika
1/4 teaspoon Salt
1/4 teaspoon Pepper
1 Cup Italian Style Bread Crumbs, divided
Heat oven to 450 degrees. Coat a baking sheet with nonstick cooking
spray. Combine all ingredients along with 1/2 Cup Bread Crumbs. Form
mixture into 12 patties. Coat the salmon cakes with the other 1/2
Cup of Breadcrumbs. Bake for 15 minutes, flip and continue baking
for another 15 minutes or until golden brown.
