Cheesy Chicken &
Rice Casserole
1 Lb.
Tyson Ground Chicken Breast
1/2 Cup Onions, chopped
1/2 Cup Bell Peppers, chopped
2 teaspoons Chili Powder
1/2 teaspoon Salt
1/2 teaspoon Black Pepper 1 (8 oz.) Can Tomato Sauce
1 (15.5 oz.) Can Dark Red Kidney Beans, rinsed and drained
1 Cup Instant Rice, uncooked
1 Cup Fat Free Shredded Cheddar Cheese
Preheat oven to 375 degrees. Cook rice according to package
directions, set aside. Spray an 8X8 baking dish with nonstick
cooking spray, set aside.
In a large skillet, cook chicken, onions and bell peppers until
chicken is no longer pink. Stir in chili powder, salt, black pepper
and tomato sauce. Add the kidney beans followed by the rice
and cheese; stir well to combine.
Pour mixture into prepared baking dish. Bake for 15-20 minutes or
until heated through and cheese is melted.
