Light Lemon

1 Small
Box Sugar Free Lemon Jello
2/3 Cup Boiling Water
1 (8 oz.) Package Fat Free Cream Cheese
1 Cup Small Curd Fat Free Cottage Cheese
1/2 Cup Splenda Granular
1/4 teaspoon Lemon Extract
1 (8 oz.) Container Fat Free Cool Whip
5 Reduced Fat Honey or Cinnamon Graham Cracker Sheets
Place the graham cracker sheets into the bottom of a 9 inch baking
dish. You may need to break one to make them fit. Mix the Jello with
boiling water; set aside. In a blender, blend the cottage cheese,
cream cheese, Splenda and lemon extract. Add the Jello mixture and
blend until smooth. Pour the mixture into a medium mixing bowl and
whisk in the cool whip. Pour the mixture evenly over the graham
crackers and refrigerate for at least 8 hours or overnight to allow
the graham crackers to soften. The texture of this is light and
airy. Great for after dinner.
