 S'More Parfaits

4 Sheets Low Fat Graham Crackers (these are 1 point each)
1 (1.4 oz.) Package Sugar Free Instant Chocolate Pudding Mix
2 Cups Skim Milk
1 Cup Miniature Marshmallows
Fat Free Cool Whip (optional)

In a bowl, whisk milk and pudding mix for 2 minutes. Spoon 3 Tablespoons of pudding mixture into 4 parfait glasses. Layer each with half a sheet of coarsely crushed graham crackers. Spoon 3 Tablespoons of pudding mixture into each glass. Top each with 1/4 cup marshmallows, followed by the rest of the pudding mixture and the other half of the graham cracker sheets. Refrigerate for at least 1 hour before serving.
Top with 2 Tablespoons of Cool Whip.
