Baked Apple
with Vanilla Sauce
1 (0.8
oz.) Package Sugar Free Cook N Serve Vanilla Pudding
2 Cups Skim Milk
1 teaspoon Rum Extract
Cinnamon
4 Packets Splenda
4 Small Apples
Cook Pudding according to package directions. Add Rum extract and
1/8 teaspoon cinnamon. Set aside. Core and peel apples. Place apples
in a microwave safe dish along with 1 tablespoon of water. Sprinkle
each apple with 1 packet of Splenda. Sprinkle a little cinnamon on
top of each apple. Cook on high for 3-4 minutes or until soft. Let
apples sit for a few minutes, then place each apple on a small plate
or bowl. Divide vanilla sauce evenly over apples and serve warm with
1 T. of Fat Free Cool whip (optional).
