Recipes - Crockpot

 

 

 

 

Hearty Vegetable Soup

8 Cups Water
1 1/2 Cups Crockpot Soup Mix (see below)
1/2 teaspoon Salt
1 teaspoon Pepper
2 Medium Carrots, sliced
2 Stalks Celery, chopped
1 1/2 Cups Bagged Classic Coleslaw Mix
1 (6 oz.) Can Tomato Paste
1 1/2 Tablespoons Beef Base

Combine all ingredients in a crockpot and cook on high for 4-6 hours or on low for 8-10 hours.

 

Serves: 5 (2 Cups Each)
Per Serving: 222 Calories; 1g Fat (4.8% calories from fat); 11g Protein; 44g Carbohydrate; 11g Dietary Fiber; 2mg Cholesterol; 1096mg Sodium. Exchanges: 0 Grain (Starch); 2 Vegetable; 0 Fat. WWP: 4

Crockpot Soup Mix

1 Pound Dry Green Split Peas
1 (11 oz.) Package Quaker Pearl Barley
1 (12 oz.) Box Hodgon Mill Whole Wheat Pasta Shells
1 Pound Lentils
1 1/2 Cups Brown Rice
1/4 Cup Dry Minced Onion

Combine all ingredients in a large airtight container. Stir well.
Store in a cool dry place for up to 6 months. Shake before using. Makes enough for 8 batches of Hearty Vegetable Soup.
