Hearty Vegetable
Soup
8 Cups
Water
1 1/2 Cups Crockpot Soup Mix (see below)
1/2 teaspoon Salt
1 teaspoon Pepper
2 Medium Carrots, sliced
2 Stalks Celery, chopped
1 1/2 Cups Bagged Classic Coleslaw Mix
1 (6 oz.) Can Tomato Paste
1 1/2 Tablespoons Beef Base
Combine all ingredients in a crockpot and cook on high for 4-6 hours
or on low for 8-10 hours.

Crockpot Soup Mix
1 Pound Dry Green Split Peas
1 (11 oz.) Package Quaker Pearl Barley
1 (12 oz.) Box Hodgon Mill Whole Wheat Pasta Shells
1 Pound Lentils
1 1/2 Cups Brown Rice
1/4 Cup Dry Minced Onion
Combine all ingredients in a large airtight container. Stir well.
Store in a cool dry place for up to 6 months. Shake before using.
