Enchilada Pie
12 oz.
Boca Meatless Ground Burger
1 Cup Chopped Onions
1/2 Cup Chopped Green Peppers
1 (16 oz.) Can Red Kidney Beans, rinsed and drained
1 (15 oz.) Can Black Beans, rinsed and drained
1 (10 oz.) Can Diced Tomatoes with Green Chilies, undrained
1/3 Cup Water
1 1/2 teaspoons Chili Powder
1/2 Teaspoon Ground Cumin
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 Cup Fat Free Shredded Cheddar Cheese
1 Cup Fat Free Shredded Mozzarella Cheese
6 (98% Fat Free) Fajita Size Flour Tortillas
Cook Crumbles, onions, and green peppers in skillet until vegetables
are tender. Add next 8 ingredients and bring to a boil. Reduce heat.
Cover and simmer 10 minutes. Combine cheeses. In a slow cooker
sprayed with non-stick cooking spray, layer: 3/4 cup of hot mixture,
1 tortilla, and 1/3 Cup Cheese. Repeat layers until all ingredients
are used. Cover. Cook on low for 4 hours, or until heated through.
Serve with fat free sour cream and salsa (optional).
