Make Ahead Bran Rolls

1 2/3 Cups Water
2 1/2 Cups Flour
1 1/2 Cups Wheat Bran
3/4 Cup Whole Wheat Flour
1 1/2 teaspoons Salt
1 Tablespoon Sugar
1/4 teaspoon Garlic Powder
2 1/2 teaspoons Instant Yeast
2 1/2 Tablespoons Wheat Gluten

Heat the water in the microwave on high for 1 1/2 - 2 minutes. It should be hot, but not boiling. Pour the heated water into a bread machine. Add the salt, sugar and garlic powder to the water. Add the all purpose flour, then the wheat bran, then the whole wheat flour. Make a "trough" in the whole wheat flour with a knife blade and sprinkle the yeast into the trough. Spoon the wheat gluten over the yeast. Set the bread machine to the dough cycle. When it's completed, remove the dough from the pan to a lightly floured board and punch it down. Divide the dough into 16 pieces (this would be about 2 oz. or 1/4 cup each). If you use a measuring cup, make sure you spray it with non-stick cooking spray. Roll the dough into balls using floured hands. Place each piece of dough into a muffin tin that has been sprayed with non-stick cooking spray. If you're going to bake them today, place 2 cups of water into the microwave and heat on high for 5 minutes. Move the water to the back corner of the microwave and place the muffin pan with the dough inside to rise. Set the timer for about 20 minutes, and check every 5 minutes thereafter until the dough has almost tripled in size and is above the top of the muffin pan. Preheat the oven to 350 degrees. Place the muffin tin in the oven and bake for 12-15 minutes or until the rolls are lightly browned. If you don't want to bake your rolls today and prefer to freeze them so you can pull them out and bake them as needed, simply place the muffin tins into the freezer as soon as you've portioned out the dough. One the dough is completely frozen, pop them out of the tins and place them in a zip lock freezer bag. When you want to bake a few, simply pull them out of the freezer, place them on a cookie sheet that has been sprayed with non-stick spray and let them sit in a warm place until they've thawed and tripled in size. Then bake as directed above. The thawing and rising process will take some time, so you need to plan ahead. I usually get them out of the freezer in the late morning and just let them sit until I'm ready to bake them for dinner.
