High Fiber - Low Fat Pancakes

1 Cup Low Fat Buttermilk
1/2 Cup Quick Cooking Oats
2/3 Cup Wheat Bran
1/4 Cup Egg Substitute
1/4 Cup Whole Wheat Flour
2 Packets of Splenda
3/4 teaspoon Baking Soda
1 teaspoon Baking Powder
1/4 teaspoon Salt

Combine the buttermilk, oats and bran in a large bowl. Let stand for 5 minutes. Add the egg and beat until blended. In a small bowl, mix whole wheat flour, Splenda, baking soda, Baking Powder and salt until blended. Add to the bran mixture and blend. Prepare a hot skillet or griddle with nonstick spray. Pour in 1/3 cup batter for each pancake. Cook until bubbles form on top and edges are dry. Turn and cook 1-2 minutes more, or until done. 

Serves: 6 (1 pancake each)
