Apple Cinnamon
Coffee Cake
Topping:
1/2 Cup Grated Apple (about 1/2 an apple)
1/4 Cup Quick Cooking Oats
1/4 Cup Brown Sugar
Cake:
1 Cup All Purpose Flour
3/4 Cup Whole Wheat Flour
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Cinnamon
2 Egg Whites
1/2 Cup Packed Brown Sugar
1 Cup Unsweetened Applesauce
3 Tablespoons Smucker's Fat Free Oil Replacement for Baking
1/4 Cup Skim Milk
1/2 teaspoon Vanilla Extract
Powdered sugar for dusting
Preheat oven to 350 degrees. Spray an 8X8 inch square pan with
non-stick cooking spray.
In a medium bowl, combine grated apple, oats and brown sugar. Spoon
into a prepared pan and set aside. In a large bowl combine flours,
baking powder, baking soda and cinnamon. In the same bowl you used
to mix the topping, combine the egg whites, 1/2 cup brown sugar,
applesauce, oil replacement, skim milk and vanilla. Stir until there
are no lumps. Pour this mixture into the flour mixture and stir
until blended. Do not over beat. Pour the batter over the grated
apple topping. Bake for 30-35 minutes, or until the surface of the
cake is firm to the touch. Cool for 10 minutes, and then dump the
cake out of the pan onto a cutting board. Cut into 8 pieces and dust
each piece with a small amount of powdered sugar right before
serving.
